help with mail templates variable

Hello,
i begin to work on a customer who uses your chat but is not much customized. I'm trying to use the variable found in the mail templates. The send mail to user variable works fine but trying to use the other the output is this:
What should i do?

simply if i write in the message body {additional_message} i have the output i expect in the mail. but if write any other variable like {email} the output is Email: {email}. I looked in the forum and found only this (topicid 1226) that not explain how it works.

Marcello, I'm not the developer.
The developer is busy maybe helping business activity or developing the software.
You can try to wait here for see if you get any reply but I'm not understanding what you need.
Maybe you expect to have a full documentation on all possible variable like {email}, {country}, etc but I cannot give to you and don't know if is it.

I use the default email template and it's OK for me.

Varaibles you see in default e-mail tempalte is only the one supported there.
