Hello, first time poster here.
So I am having a bit of a dilemma,
it seems that when I test the chat function out (and had testers) the response time of receiving the chat notification and being showed
in the unread messages seems to be pretty slow, is their any reason for this, my internet is absolutely fine, is their anything that I can customise to make it instant?

Are you on a shared hosting?
Self hosted live chat are not suggested in shared hosting, some times forbidden by the Terms and Condictions of the Hosting Company.
The slow time can be because shared hosting not have dedicated resources.
For shared hosting the solution suggested is a live chat system hosted away:

If you look for something free you can try to search free live chat on the Internet.
Ex: https://www.tawk.to/
