Custom field from frond end website

I got two problems from Custom field

1. I added custom field with using prefill in online forms like this :
https://livehelperchat.com/pre-filling- … -140a.html
How to exclude those fields in offline forms?

2. how to set alternate text for those custom fields base on question 1?
