welcome in the live chat forum!
You can use an open source like OsTicket.
As OsTicket has filter you can filter email and use the reply to address for open ticket maybe if the started chat has not been replied after a while or for offline messages.
There is also a live helper chat plugin but i am not using this as as told before you can use OsTicket filter and some LHC settings.

In my LHC department settings I set LHC to send an email if a chat is pending without reply after a while.
When this is done as the department email is checked by OsTicket for new emails and new ticket a ticket is opened with the customer email as OsTicket has been set to use the reply to address in the filters.
If you want install and use extension I advise you I cannot give support on the plugin You need ask to the chat owner on GitHub.
