How to hide IP
Hello I really don't want my staff group to be able to see users/visitors who send messages IP's is there a way to disable from the IP showing to the staff team group?

No, there is no sutch granular permission 
You have few options
1. Report github issue with your future request
2. Override template and remove this variable.
